White Beans and Greens

3 Tbs olive oil, divided
2 cans (15 oz each) white beans (undrained)
2 tsp vinegar
1/2 tsp salt
10 ounces chopped spinach (frozen or fresh)
1/2 tsp crushed red pepper flakes or cayenne
1 cup grated cheddar or parmesan cheese
1 cup bread crumbs

If using frozen spinach, thaw it in the microwave. If using fresh spinach, saute it in a little olive oil until it wilts.

Heat the oven to 425. Grease a 9x9 pan or other shallow baking dish with 1 tbs of the olive oil.

Combine the beans and their liquid, 1 tbs of olive oil, vinegar, and salt. Mash with a potato masher or your mixer. Keep it somewhat lumpy.

Drain spinach. If using frozen, squeeze it dry. Add the spinach to the bean mixture with the red pepper flakes and mix together. Put this into the greased dish. Mix the cheese and bread crumbs together and sprinkle on the top. Drizzle the remaining tablespoon of olive oil on top.

Bake for 20 minutes.
