Chopped Salad with Homemade Ranch Dressing
The dressing here came straight from EverybodyLikesSandwiches. I modified the salad based on what I had on hand. The dressing came out a bit runny this way, so you may want to add more sour cream (or yogurt) and mayonnaise. But the flavor is fantastic! Tart and tangy and sweet and buttermilky.
Dressing:
- 1 cup buttermilk
- 1/4 cup sour cream
- 1/4 cup light mayonnaise
- juice and zest of 1/2 a lemon
- 1 tsp honey
- 2-3 cloves garlic, minced (I like a lot of garlic)
- 2 T grated onion
- 1 pinch dill
- 1 pinch oregano
- 1/4 tsp paprika
- 1/2 tsp Kosher salt (less if non Kosher)
- 1/2 tsp ground pepper
- a shake of Tabasco sauce
Salad:
- 2 cups chopped snow peas
- 1 carrot, peeled and chopped
- 1 ear of corn, microwaved in the husk, then the kernels cut off
- 1/2 cup red cabbage, chopped
- 1 head Romaine lettuce, chopped
I was going to add a chopped cucumber to the salad but just forgot.
I served this with some leftover flank steak and it made a fantastic dinner.
