Dressed Up Black Beans

I like to cook dry beans but let's face it: I don't always plan ahead. Canned beans are still pretty frugal. But dumping a can of beans in a bowl and microwaving them may not qualify you for chef of the week. Here's an easy way to dress them up a bit and give them your own special touch.

1 tsp olive oil
1 onion. sliced
1 can black beans, not drained
1/2 tsp cumin or chili powder or a few shakes of red pepper flakes

Heat the oil in a frying pan while you peel and slice the onion. Cook the onion very slowly until brown and caramelized. Add the beans and the flavorings of your choice. Simmer until the liquid is mostly evaporated.
