Flank Steak with Lime Marinade

4 Tbs lime juice
2 Tbs soy sauce
1 tsp minced garlic
1 tsp minced fresh ginger
1 tsp sugar
salt and black pepper to taste (hmm..maybe 1/4 tsp of each)
1 flank steak

Mix up the marinade. Trim the steak of any visible fat. Put it in a flat dish or a plastic bag you can seal and pour the marinade in. Marinate at room temperature for 30 minutes or so. Put it in the refrigerator for longer. (Or put it in a freezer bag and freeze for another day. The steak will be marinating while it's thawing. Quick and easy!)

Grill or broil the steak. I always grill it, about 5-7 minutes per side, depending on the thickness. Let it sit a few minutes after it's cooked. Slice it against the grain into thin pieces.

Leftovers? Use on steak sandwiches, in stir fries, or salads.
