Gingerbread

2 1/2 cups flour
1 tsp cinnamon
2 tsp powdered ginger
1 tsp ground cloves
1/2 cup butter, softened
1/2 cup sugar
1 cup dark molasses
2 tsp baking soda
1 cup boiling water
2 eggs, slightly beaten

Preheat the oven to 350. Grease and flour an 8" square pan.

Combine flour, cinnamon, ginger, and cloves and sift together onto a piece of waxed paper.

Put the butter in a large mixing bowl and beat until creamy. Add the sugar and molasses and continue beating until well blended. Combine baking soda and boiling water and add to the butter-sugar mixture, beating well. Add the flour mixture and beat until smooth. Add the eggs and beat.

Pour in the prepared pan and bake for 45-55 minutes, until a toothpick inserted in the middle comes out clean. Let cool in pan 5 minutes, then turn onto a rack. Serve warm or cool.
