Cornmeal Mush

This easy recipe makes a tasty breakfast as a hot cereal right out of the pan, but is also delicious if you cook it ahead of time, refrigerate in a loaf pan, then slice and fry in a bit of butter. Serve with maple syrup or brown sugar.

3 cups water

1 cup cold water
1 cup cornmeal
1/4 cup flour
1 tsp. sa
lt

Bring the 3 cups of water to boil. Mix the cornmeal, cold water, flour, and salt together, then add to the boiling water, stirring with a wire whisk to break up any clumps. Turn the heat down to low and cook, covered, for 30 minutes.

If you want to fry it, put it in a loaf pan, cover with plastic wrap, and refrigerate overnight. Slice it in 3/4" slices, dredge in a bit of flour if you'd like. and fry in a bit of butter till it's a bit crispy, then turn and fry the other side.
