Ground Beef or Turkey Tacos

soft tacosThis is an old standby favorite for dinner around here. You can skip buying the taco seasoning packages at the grocery store, which easily add to the cost of the meal for no great flavor improvement. (Or if you like the idea of having pre-measured mix packets around, use this recipe instead.)

Brown the ground meat. If you're using a fresh onion, cook it with the ground meat. Add the seasonings and tomato sauce and simmer 10 minutes, stirring occasionally.

You could also use boiled hamburger for this. Just defrost the cooked meat and add to the other ingredients or simmer.

Serve with soft tortillas or hard shells with chopped lettuce, salsa, sliced olives, and shredded cheese. Goes great with Spanish Rice and refried beans or dressed up black beans. Any leftovers make a great taco salad or can be used in taco meat pies.

If you like hard shells, you can fry your own in hot oil rather than buying a whole package. Heat a 1/2" of oil and add a corn tortilla. Cook on one side until it starts to get done, then flip over for a few seconds, then fold in half while still frying. Lay on paper towels to drain. Fry up any leftovers until hard and then break up and salt for fantastic tortilla chips! (Not low fat however!)
