Marinated Vegetable Skewers

This is so easy it's almost not a recipe. But sometimes we just need ideas to jog us into making dinner each night so here goes!

You can use your favorite bottled Italian dressing or make up a batch of your own oil and vinegar mix. For starters, consider

/3 cup vinegar (balsamic works nicely)
1/4 cup olive oil
1 tablespoon dried parsley
1/2 teaspoon dried rosemary, crushed
salt and pepper to taste (1/4 tsp each to start)

Use your family's favorite vegetables:

mushrooms
green, red, or yellow bell peppers, seeded and quartered
onions, quartered
cherry tomatoes
eggplant
summer squash, green or yellow or a combination

Cut up whichever vegetables need cutting to make a nice serving piece. Try to have them all about the same size. Marinate 4 hours or more in the dressing of your choice.

Thread on skewers. If you're using wooden ones, remember to soak them in water an hour or so before threading the vegetables. Grill 10 minutes or so, turning the skewers a few times so the vegetables cook evenly.
