Zucchini Bread

If you grow zucchini, or have a neighbor who does and shares the excess bounty with you, you'll need a good zucchini bread recipe. If you've really got an excess, you can grate and freeze the zucchini in 2 cup portions. After you thaw it, drain any excess water before baking with it.

3 large eggs
3/4 cup sugar
1 cup vegetable oil
2 cups raw, grated zucchini (peeled if large)
1 Tbs. vanilla
3 cups flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 cup chopped nuts (optional)

Preheat oven to 350.

Combine eggs, water, sugar, oil, zucchini, and vanilla in large bowl and mix well.

Add in the other ingredients and mix well.

Pour into 2 greased 8" bread pan. Bake 1 hour. Remove from pans and cool on wire racks.
