Fresh tomatoes in the garden or at the farmer’s market? Here’s a great pasta recipe, totally adaptable to different quantities.
Chop the tomatoes and put them in a bowl. Add chopped onion, garlic, olive oil, fresh chopped basil, and chunk of mozzarella (or grated cheddar), plus salt and pepper. Let it sit around an hour or so.
Cook your choice of pasta. (Fettucini or small shells work well.)
Drain the pasta and add it to the tomato mixture and mix well. Serve with some French bread to sop up the juices!
This reheats well and is great for lunch the next day so make some extra!
