Crockpot Chicken and Mushrooms

 Remove the skin from some bone-in chicken breasts and sprinkle with salt, pepper, lemon pepper, and paprika. Put them in the crockpot. Mix together a can of cream of mushroom soup, up to a cup of sour cream, and 1/2 cup or so of white wine or chicken broth. Add either sliced fresh mushrooms or a can or two of mushrooms. Pour over the chicken and cook on low for 6-8 hours.

Pasta with Fresh Tomatoes Sauce

Fresh tomatoes in the garden or at the farmer's market? Here's a great pasta recipe, totally adaptable to different quantities.

Chop the tomatoes and put them in a bowl. Add chopped onion, garlic, olive oil, fresh chopped basil, and chunk of mozzarella (or grated cheddar), plus salt and pepper. Let it sit around an hour or so.

Cook your choice of pasta. (Fettucini or small shells work well.)

Drain the pasta and add it to the tomato mixture and mix well. Serve with some French bread to sop up the juices!

This reheats well and is great for lunch the next day so make some extra!
