I have made similar ones before, with a different dough. I’ve used leftover taco meat and cheese, pepperoni and cheese (like a calzone), steak and potatoes, etc.

I actually was out of frozen spinach tonight but had the frozen green giant’s creamed spinach and it turned out incredible. I will only make it with that again. I did add a lot… nutmeg, chopped mushrooms, and canned tomatoes…I know it’s not the original but I don’t care, it was to die for. Thank you for posting this!

Just wanted to add how much of a hit these were. I’ll be making more this weekend with the other half of the cabbage. The frozen ones were good, once thawed and eaten at room temperature for lunches or microwaved for snacks. Both girls loved them. (Don’t tell them there was cabbage inside though. I don’t think they noticed.)

These came out pretty good. I added a little smear of refried beans to the tortilla before I stuffed it. They weren’t as crispy as I would have liked, but perhaps I should have used more butter. Thanks for sharing this recipe!

Thank you Ellen for acknowledging my post and apologizing for the lack of accuracy and integrity of the game. I am heartened by your response that you will try to be more accurate in any future giveaway. Just imagine if recipes were not accurate! Regardless, I find your site very informative and well put together, with an abundance of inexpensive, tasty and helpful recipes as well as tips on grocery shopping and meal planning. I am glad I stumbled across it yesterday.

Sorry you feel that way. I was mainly trying to root out spammers so was quite lenient. What I wanted to know was that someone had actually read the post, so commenting on the fact that there were coupons, etc. Next time I’ll try to word things more accurately. I don’t know any of the winners and to the best of my knowledge have not communicated with them outside of this giveaway. Looks delicious definitely counts as a comment on the recipe. Anyway, this is meant to be fun. I’m always thrilled when a publisher offers to let me give away a new cookbook but it’s not meant to be a something to get upset over if you don’t win.

There is an error in my previous post, the word ‘either’ should read ‘both’ Those chosen did not comply with ‘both’ of the requirements. That’s what happens late at night when writing and rewriting a post in an attempt not to offend others, errors occur. However, the result is the same, not complying with both requirements should have automatically disqualified them. As they did not meet the criteria of the giveaway.

Congrats to those chosen to receive the book. I am new to this site & not aware perhaps of the proper protocols. However saying these 5 won is a bit of a misnomer for in truth they did not win as they did not comply with the requirements as stated. There were 2 requirements, post before 12pm PST Friday Feb 19 and mention either the book or the recipe. None of these 5 complied with either of the requirements, which in effect would actually disqualify them. This would appear to be unfair or perhaps unjust to those who actually complied, or who may have posted after the time, or might have posted after the closing time had they known the requirements were not going to be adhered to.
